Food, Family & Fun!


Can't beat chicken cooked on the grill for tenderness and flavor. I found this recipe in the newspaper years ago and continue to use it. There are many varieties of this one, including Paula Deen's Beer in the rear Chicken, but I am partial to this one. I searched on web for it but couldn't find it, was going to give you a link.

Beer Can Chicken

1 large 4-5 lb. chicken (or half the hot rub recipe for small chicken)

Wash Chicken and pat dry

Melt 3 T butter and add 1/2 tsp liquid smoke. Brush this mixture on outside of chicken.

Hot Rub:
2 T Kosher salt
2 T Black pepper
2 T Paprika
2 T Brown sugar

Sprinkle half of hot rub on outside of chicken. (this mix was enough for my 2 chickens) Sprinkle half of remaining inside the chicken and put remainder in half a can of beer. (remove the lid or use can opener to open, allowing mixture to be added)

Stand the chicken on the can of beer, put in cake pan and bake at 350 deg. for 2 - 2 1/2 hours, until tender. I like cooking on grill rather than oven.

The result:
Fall off the bone, tender chicken











Add some special barbeque sauce made by my brother and sister in law...yum...yum!


Can't believe we ate it all and now I'm ready to fix another plate!

I have never had this, but it's one of my son's favorites. He says it's because it's so easy to do. Maybe Papa and I can get him to grill when we are there for Palms Sunday!!

Mmmm Mmmm!!! The lil headless suckers look sooo good - My mouth is watering! It's only 9:30am here right now, but I could sure go for some of that right now!!!
