Let's Talk Okra






Fried Okra, doesn't get much better! Notice the package, product of Mexico, packaged in MN, shipped to Arkansas and on my table,,,still fresh and tasty! I would like to commend everyone involved in this process!

Paula Deen has a recipe, which I cannot find to post for you, but she said to drizzle in buttermilk, coat with salt, pepper and meal then fry...Yes! I highly recommend her recipe!

Hosta






I love my hostas! If I had divided them as you should, I could have made a beautiful large bed! I intend to separate them every year and all of a sudden they have grown to a point that I hate to dig them up and risk losing them. Do you have hostas? Do you separate them? My dad and his wife started with one hosta and divided them every year and ended up with a beautiful bed that lined the fence in their backyard.

Hostas are easy to grow, shade tolerant, herbaceous perennials. Hostas are grown mainly for their beautiful foliage. Hosta leaves come in a wide range of shapes, colors, sizes, and textures. One common name for Hosta still used in some garden centers is Plantain Lily. Hostas are sometimes still referred to as Funkia. But the real name for hosta is Hosta.

Hostas are native to Japan, Korea, and China. They were first imported and grown in Europe in the late 1700’s. By the mid-1800’s hosta were growing in the United States.

My New Magazine!

Boy was I surprised when I received my first copy of Everyday Food, Martha's new magazine. It is readers digest size! Interesting! Haven't read it yet, I'll let you know if it is worth the purchase, later. It will be easy to forward to my daughter, being so small. We share magazines and I haven't found the right size envelope to mail RR's to her. It is a bit over sized.

Mom's Tuna Fish



Don't you just love tuna fish sandwiches? I decided to skip the bread today and have it on a bed of lettuce. There are two things missing from this lunch, fresh tomatoes and sliced cucumbers! That would have made it all complete. My mom made the best tuna fish. Her secret ingredient was an apple! I always chop an apple in mine and it gives it a flavor I love. When I was in the first grade I remember my teacher asking me everyday what I brought in my lunch. If it was tuna she would beg to trade sandwiches, of course I would. She loved mom's tuna fish. I guess you could say that was back in the good ole days when you could safely trade sandwiches with your teacher.

Mom's Tuna
2 cans tuna
2 boiled eggs
2 T mayo (I use miracle whip)
3 Heaping T. sweet pickle relish, drained
1 Apple
Enjoy!

Back to the yard,,,still planting flowers. I have gone back to Lowe's twice for more potting soil. I never learn to buy several bags at a time. I'm talking those huge bags, heavy!

A Day at the Nursery!



The weather has finally warmed up enough for me to make my annual visit to the nursery. This nursery is back in the country about 20 miles from my house. They sell to Wal Mart, Lowes, etc. but I can cut out the middle man by making a visit in person. I love this trip but it is so hard to decide which plants to buy. For instance:
Would you choose impatiens?..or a sunflower?












They also had a wonderful selection of hanging baskets,









I finally decided on 2 ferns, 2 hanging baskets, and a flat of misc.








Tomorrow it is flower pots, miracle grow and hands in the dirt!!
I do love spring, almost as much as summer!

I almost forgot, I saw one butterfly in the nursery, I think he has found a home!





It was a fun day, hope you all are having fun too!

Fun, Family, Food

Fresh Scents


Half a bag in vacuum cleaner bag and oh my, the house smells so good. I love a fresh clean ordor and this one is one of my favorites. Have you tried these? They have some wonderful scents to choose from. I have one in my closet too. Ok gotta get back to cleaning, just wanted to share this with you. Have a Good Friday! Wait until you see what we are cooking tomorrow!!! Girls are coming for the weekend and I can't wait.

Full Moon

Last night I looked outside just before dark and the moon was just gorgeous!







I usually toss and turn all night when the moon is full, but not last night. I sleep so good when I can raise the windows. It was so nice yesterday and I had all the windows up, so in spite of the full moon I slept great. Does the moon bother your sleep? I will try for an hour to go to sleep then I go to my chair and read. I enjoy a good book in the middle of the night sometimes. Tonight might be a reading night, if we have power, storms forecast for the night, hail, gusty winds!!!

Paula Does it Again!


Have I told you about the Chicken and Rice Casserole from The Lady & Sons Cookbook? The recipe makes a 9x 13 which is way too much for two people so I made two smaller ones and froze the extra. Tonight was the night for the frozen one.....thawed it, covered it with cheese and baked it....how easy is that. Result, Excellent,,,,better than the first one. Couldn't find the recipe on Paula's site so here it is, and I recommend it!

3 cups diced cooked chicken, ( I boiled whole one)
1 medium onion, diced and sauteed
1 - 8 oz can water chestnuts, drained and chopped
2 - 14 1/2 oz cans french green beans, rinsed and drained (I have to omit these, he wouldn't even bite anything green)ha
1 - 4 oz can pimentos, rinsed and drained
1 - can cream of celery soup
1 - cup mayo
1 - 6 oz box Uncle Ben's longrain and wild rice, cooked according to pkg directions
1 - cup grated sharp cheddar cheese

Preheat oven to 300 degrees. Mix all ingredients together and pour into a 3-quart (or 2 smaller). Bake for 25 minutes.

Let me know if you like it, I wish I could have it with the green beans in it!

New Visitors

I have some new visitors in my neighborhood, aren't they pretty? I hear them coming in every morning.



I was going out to fill up the feeder and look who popped out!




The bird bath was a busy spot also.


I'll be glad when the butterflies show up. I am going to the nursery tomorrow and buy a butterfly bush to be ready for them. I am ready for hanging baskets on the porch and hummingbird feeders. I am so ready to start spending my days outside. I mowed the yard this weekend and went from shorts and sleeveless shirt to jeans and tee shirt to sweatshirt and then back to shorts!!! Weather was just ridiculous, cold, warm, cold, hot, gosh!!! The one constant was "Wind".

You have to admit they have some great commercials! I got to see the team Saturday and they are so beautiful! King (dalmation) is so handsome even though he got a bit tired, or bored, just sitting still for 2 hours in the warm sunshine! The harness cost $80,000, per horse, were trimmed with gold squares, very "nice"

I Can Dream Can't I???

Yum, Yum


I was looking through my many recipes this week and ran across one of my favorites that I haven't made in a long time, Salmon Croquettes Supreme. I got this from Southern Living years ago.

1 - 15 1/2 oz can salmon
2 eggs beaten
1 cup toasted breadcrumbs
1/2 cup shredded cheddar cheese
salt & pepper
Onion salt
Flour
Oil
Drain salmon, remove skin and bones. Flake salmon, add next 5 ingredients, blend well. Shape, coat with flour, pan fry, turn once.


Fast, easy and very good. Plus today I have one on a bun with tartar sauce, lettuce and tomato, good sandwich!!!

I believe I mailed in box tops years ago and got Solar all of the doughboy toys, and she loved them.
