Now that is a perplexing problem! I never would have thought about that...maybe all these years I haven't measured correctly? And I too could just eat the cheese right here and now!
With cheese, it is all about the weight (OR sometimes it will specify number of cups of shredded). The ounces on measuring cups are for liquid measures. So, you are exactly right about whatever weight is on the block package being the right weight before AND AFTER you shred it... shredding just makes it fluffy, but the weight stays the same, compact or fluffed. you can shred it from the block or buy it already shredded... but if you don't hurry, I'LL EAT IT BY ITSELF!!! I l♥ve cheese! =)
I always take it to mean the weight of the already shredded cheese.

What confuses me is....8 oz package of shredded cheese says 2 cups on the package. 2 cups = 16 oz..... see what i mean?
I usually shred (or buy shredded) and then measure.
