" I’m happy to share my method for making creamy, dreamy, delicious, nutritious, yummy, nummy white chicken enchiladas." Amen, sister! I will tell you it was worth every minute it took to assemble. In the cookbook she uses fresh peppers, grill or broil until skin is black then place in a ziplock to steam while starting next step. On the website she uses canned peppers. I'm glad I didn't see the canned version until after I used fresh peppers, cause I know I would have gone the easier route with canned......don't do it....peppers are so good right now, use them.
Topped with pico, sour cream and a side of mexican rice, it was just perfect! I'm looking forward to leftovers!

They sound wonderful. I will have to do a few adjustments to the recipe so I can eat it on my alkaline diet.. Who knows, I may try the cheese and see if it bothers me. Thanks for posting this.
They look and sound delicious, Nanny! I bet the fresh roasted peppers really made a difference.
Oh My---I would love those Chicken Enchiladas... I've eaten them in restaurants but have never made them...

YUM!! We enjoyed brisket tacos from Mi Cocina last night... now, I could turn right around and have these today. Love me some Mexican food!
