Salads.....

Growing up my mom always made a salad of some sort with our meals. I have gotten away from mom's delicious salads but I am bringing them back to the table. They weren't fancy or difficult to make but were healthy....

One of my favorites was chopped celery and apple; mixed with mayo, a sprinkle of sugar. I made this one recently and was asked by my husband, "Is this supposed to be good"....how would you answer that? Of course I replied, "no, it's supposed to be awful, but I like it" He actually ate it and liked it. It's just hard to get him to try anything that isn't meat and potatoes/ha




Next on my list to make is shredded carrots, raisins, mixed with mayo and yes you guessed it, a sprinkle of sugar. I probably will make a small bowl of this one, because I'm thinking it will be all mine.

Sometimes it was a lettuce leaf with a slice of pineapple or a half pear, with cottage cheese or shredded cheddar! Simple again and tasty.

My all time favorite salad that mom made was lovingly named by me....Sour Salad! I would request this one often.
Chop or shred cabbage, add chopped onion
Cover with vinegar and maybe a little water.
Salt, pepper....and wait. It gets better the longer you have it. Oh sour salad is so good with fresh vegetables!

I have recently heard so much about egg salad that for the first time in my life...I just made a bowl. It looks like a bowl of mashed up deviled eggs.....which means I will love it. Looking forward to luch today.

I can't wait to try them all, they look so yummy! I too will probally make single servings of these salads...all for me! Our husbands sound just a like.

my favorite salads are with lettuce, tomatoes, black beans, green onions, carrots, califlour, sliced cucumbers, grated cheese, green olives, oh that is making me hungry...

ALL those sounds yummy, Nanny! Evan's favorite salad in the world it the carrot/raisin combo. Did ya'll ever have the one with lettuce, tomato, red onion, cubed Velveta cheese, Ranch Style beans, Fritos and Catalina dressing??? I LOVE that! Brings flashbacks! LOL. ... of course, none of these pass the no carb test. On week five now... getting closer to eight! Woo hoo! Enjoy those salads enough for me until I can have some myself! =)

Well, I love all of these salads! Is that a Paula Deen seasoning blend? I tried to see if you mentioned it so sorry if you did and I missed it.

I like just about any kind of salad! Salad is good! :)

I don't think my Mom ever made a salad. She was a skinny little thing, but it was not from eating salad (o: My husband says things just like that. I love the soup bowel at Panera bread. My husband says, "Why would anyone want sour bread?" Men!
I love Carrot raisin salad. I have not had it in a long time. I love egg salad...will make some soon just because you mentioned it (o:

Noni...I have had one similiar to yours but didn't have the velveeta...yum..
Ungourmet...yes paula seasoning, I got 2 for a gift. one is Silly Salt and the other Pepper Mix, and they are both very good!
Oh Grammy, I love soup in a bread bowl at mccallisters deli...I can taste it now! We need to go there together!

Hi Nanny,

I don't remember apples, but my mom always made salads for supper, too. She's always put celery, carrots, etc., in it & my friends would always say, "Why is there celery & carrots in the salad?" They'd never heard of such a thing. Mom wouldn't put a whole lot of cheese on the salads either, but I'd always cut up slices of cheese in mine.

Egg salad doesn't sound appealing to me. Did you like it? i buy a big box of lettace from Sams and add veggies to it then take it for lunch.

LOVE egg salad! Will have to try your apple/celery combo.

My mom used to put the lettuce leaf, pear, cottage cheese combo at each place setting. It was always so pretty.

I love Mandarin salad with romaine, mandarin oranges, toasted pecans, soy/garlic vinaigrette...YUM!

I love egg salad and chicken salad and shrimp salad...etc---living in Brooklyn as I do there are a LOT of Jewish deli's and they are famous for their salads. The Italian deli's have antipasto salad which is cubed pieces of ham, salami, cheeses, olives, marinated peppers, etc.
When I make salads at home I like to use a mix of baby spring greens with goat cheese and balsamic vinegar and olive oil. I also like caesar salad with romaine lettuce, croutons, shavings of Parmesan and a egg and anchovies based dressing. Yes, I admit it -- I'm a foodie -- lol.
All mixtures are good! Enjoy!
PS -- I often buy my fish and veggies in the Chinese market.

My mother always made me an egg salad for lunch when I first went to work at the dime store (1961!). Sometimes I make myself one when I'm remembering her and missing her. blessings, marlene
