Tex Mex

I love, love my new cookbook! It has the most wonderful collection of dips, salsas, marinades, fajitas.....all things that I could live on!!!

Last night I made Chicken Taco Bake and the flavor was amazing. How could in not be, the combination of tomato juice, green chiles, cheese and cream!!!

I halfed all ingredients and used smaller dish since there was only 2 for dinner. It was so good and very little left.

I wish I had made the whole recipe; I think it would get even better as leftovers!

I copied that off...I never use cream, but wouldn't hurt to try. What if I used tortillas that had not been fried? any opinion there. They are soft after being cooked that way anyway right? Just trying to cut a few calories (o:

Boy does that look good and it sounds like something that would go over really big around here. I'll have to try it out. Thanks for sharing the recipe.
