Mexican Night!

Don't you love good quesadillas? This recipe is so quick easy and tasty! I cut 2 boneless skinless chicken breasts into chunks. Stir fry with one can of rotel until all juice has cooked away and chicken is tender.










I made them as healthy as possible by using 2% cheese, whole wheat tortillas and blue corn chips for the homemade salsa.














Fill half of a tortilla with chicken mixture and cheese, fold over and brown on warm skillet or griddle.
End result was a plate of yummy mexican food and salsa that I can't quit eating!!!













Guess I'll take a pepcid (just for good measure) ha

What pray is Rotel? Then I can figure out how these would taste. They look good, do they eat good?

I am sorry I forget that Rotel is a southern staple/ha It is a can of diced tomatoes and green chilies, spicy and comes in various degrees of "hot". One can with 1 lb. of velveeta makes delicious cheese dip.

I can't imagine life without Rotel! Mexican is the "have to have" meal every week. We go out on Fridays to a little Mom and Pop Mexican place. I usually get the Carne Asada tacos that have brisket, lime and white onion and hubby ALWAYS gets cheese enchiladas...old and set in our ways! haha

When my daughter was visiting last week, she cooked some mexican burritos that were fantastic! I love eating anything cooked by anyone else besides me :) I'll have to try your quesadillas - looks yummy
