Greens

Earlier this week we took a drive to our hunting grounds.  Deer season is upon us in Arkansas.
Time to clean out the deer stands, fill the corn feeders, check on the growth of the food plots, etc.
This year the guys planted a mixture of clover, oats, beans and turnip greens.  When we approached the plot I nearly fainted.......

A beautiful patch of young tender greens?
I scrambled for a sack and there was none to be found.
What am I going to do? I have to take "a mess" of these home to cook.
Ah ha, I spotted the 40 lb sacks of corn. I asked hubby to please pour the corn out...I need that sack. Luckily the feeder had enough room to hold one more sack of corn. And then I hit the greens. (he thought I was nuts)
Within an hour I had them washed and in the pot for supper.

This brings me to a question for you. Do you cook your corn bread with sweet milk (that's what mama and daddy called whole milk) or buttermilk?
I was using Paula's recipe for the greens so I thought I'd try her corn muffin recipe to accompany them.

I found a recipe of Paula's that I don't like!!!! The flavor of muffins made with baking powder and milk did not taste good at all, no, mam!

Soooo, the next night, with leftovers (I had lots) I had my good buttermilk corn bread sticks! Yum! I use the Dixie Corn Bread recipe on Aunt Jemima corn meal sack.

Needless to say, I overate that night.

Now tell me, do you like turnip greens?

Can't say I ever ate turnip greens but I haven't eaten any green that I didn't love. But corn bread, oh yes! My favorite variation adds creamed corn to the recipe and it's divine! Your corn sticks look fabulous.

I have NEVER had turnip greens but feel confident that I WOULD like them!!!!!! They look amazing!

Thanks for the headsup about your trip to Kauai and the Waimea Canyon. Your photos are wonderful. I see from your sidebar that you have also been to Maui. When I was in college the caferteria served collard greens or turnip greens as a side for ham steak once a week so I did learn to love them :) I also love beet greens, escarole and kale.

I always use buttermilk when I make corn bread...it makes it so good!

LOVE turnip greens!! Actually, any kind of greens. And, while I love pretty much ALL cornbread, I have to confess I love the one on the Aunt Jemimah bag with sugar and sweet milk the very best. ;) I would have overeaten BOTH nights. LOL!

So interesting! I was just having a conversation earlier this week about preparing and eating turnip greens! A local restaurant includes greens with many of their entrees, some of which are a bit "different."

Later I learned the owner comes from the South and many of his offerings are cajun.

I'm not sure how he found his way to Shelby County, but I will watch to see how he does! Reading your post, I may have to go back and try one of the entrees that included greens!

I can't remember the last time I had turnip greens. I used to go with my Mammaw to Rose's Cafeteria in Laurel, MS and we would have greens there -- they were so yummy topped with a jalapeno vinegar that was sitting in a shaker at each table. My Mammaw used to make corn sticks like yours and boy were they good. I make my cornbread with skim milk that I add a TBS of vinegar to and let it sit for 10 minutes. The recipe I use is from a Cajun cookbook and only has 1 tsp of sugar. If I make sweet cornbread, then I top it with milk and have it as dessert. :) Hope you are having a great day. Tammy

Buttermilk Cornbread of course... BUT--I also like a little sugar in my cornbread.. My hubby says that I like Cornbread that tastes like CAKE.... Guess he is right!!!! ha ha

BUT--I love cornbread and greens anyway I can get them... YUM.

What book were you reading?
My last GOOD read was 'Sarah's Key' now I am just reading and not really enjoying... ahhh... the pains of finding the right book. Or Library has BED BUGS.....really!

I LOVE turnip greens! :D I acquired a taste for them at quite a young age, and I've always loved them. I can't get my husband to eat them though, and since it's just the two of us I never seem to make them. What a beautiful sight that field is; there is nothing better than hand-picking your meal right from the fresh soil! :o)

This may sound silly, but are Turnip Greens the actualy tops of Turnips????? We here in Canada Love Beet Greens and Kale and Oh yes Char! My! Oh! My! your corn sticks look sooooo good!!!!! The best corn bread I tasted was in Scotsdale, Arizona, they served it in individual cast iron pans and it was drizzled with honey...Oh!!! Yum!!!!!!
