Depression Cooking with Clara


If you watch Good Morning America, this morning you saw Clara and her segment on great depression cooking. Clara is 93 years old and has a video on you tube about a meal her mom cooked during the depression. Click here to watch. She is so precious and has a blog also. I know I will be following her recipes and blog.

Later in the day I decided to take a trip to Little Rock and check out the baby clothes.. OH MY, shopping takes much longer when you baby shop. Things have changed so much since I last shopped for baby items. And the size of the girl department compared to the boy department is just not fair. Boy clothes are stuck over in one corner of the store and the REST is all Girl Clothes!!! What do you think the reason for this is? Are there no boy clothing designers in existence or is it that boys don't like clothes? Today I was shopping for girls but it really made me feel sorry for those who would like to have a selection for their little boys. I found one store with a decent selection Gymboree!!

Ouch!


Ever had a toothache that is pretty unbearable and then it just goes away? Mine does!!! Evidently the dentists are not suffering from the state of the economy, it will be a week before I can have an appointment. Another one was two weeks.. I said you mean for a toothache I can't get in,,,reply,,,we have a waiting list of ten people, do you want on it?

High School Reunion



I love this show! Have you all watched it? It is season two for this one. TV Land Wednesday nights at 9:00 pm. What a neat concept, I am way past 20 year reunion but I think this would be interesting for any year reunion. This season has a man and his ex of 10 years, two cheerleaders who did not like each other (that's putting it mildly) for just part of the drama. They are at a beautiful home at Kauai. Last season Maui, (love the locations). Anyway they come to terms with many emotions and issues, it really is a good show!

But for tonight it is Bachelor for me!!! Women tell all/ha

Close Call!




Yes she is what you would call a House Dog! If I am inside she wants to be inside! She goes to work with me at our business on most days. She has a bed and usually sleeps or sits by the door and watches the cars go by. Business is on a very busy highway. If anyone comes in she greets them by jumping on them and wanting attention. OK so Friday was a nice sunny day and we (Trixie and I) came home for lunch and I decided I would put her food outside and leave her at home for an afternoon. I mean she usually just sits in the sun and waits for me to return.....Not this time. I get a call on cell phone, I am on the phone at work so I miss the call,,,,I don't return unknown phone calls,,,,not even curious,,,but this time I did,,,,no answer,,,oh well no big deal. Minutes later, cell rings again, same number, this time I answer it, Do you have a little white and brown dog? Yes. She is at my house on the highway, almost got run over, I called her and I have her in my house. Thanks I'll come get her.. Trixie had walked down our road (1/2 mile) turned left and was coming down highway to our business,,,,when nice lady saved her! I picked her up and put her in the car, (said Bad Dog) turned to thank the lady and she jumped out of the car and ran back up her steps,,,,ha, I'm not going with you, you are mad! I wasn't mad just trying to let her know that wasn't a good thing to do. I guess this means I can't leave her at home anymore. She did not like that idea.

Do You Like Pickled Eggs!



These are so good and so easy to make! I buy this size jar of jalapenos at Sam's or Wal Mart. After we have eaten enough of the jar that I can transfer jalapenos to smaller jars or containers, I fill the jar with boiled eggs, onion slices, and a few jalapenos. Fill the jar with half vinegar, half jalapeno liquid. (You can adjust the flavor by adding more or less jalapenos) Then comes the hard part....wait ten days or longer to eat. They are so good with sandwiches, etc. How many of you have ever had a pickled egg????

71 Degrees!

I took advantage of the beautiful day and went to the park for a walk. Lots of people were walking the dogs, children swinging, everyone enjoying the day, dreading the cold to come!









The buds are about to open, I hope the "Artic Air" doesn't hurt them.




Update on my pizza making! Crust #1 was a failure! Too thick and way too tough! Sauce and toppings were great, just gotta find another dough recipe. Help!

Winter Just Can't Let Go


Did weatherman just say "Artic Air Moving In"? Not again, chance of snow on Saturday, after 71 today. Guess that means one more pot of chili coming up. Have you tried Tom's Original Corn Chips with chili? Instead of Frito brand. They are so good, lighter flavor, not so strong. I love a big bowl of chips, chili, cheese, jalapenos and yes I like ketchup on my chili! Oh yes and a pepcid prior to this meal/ha What do you like on or with your chili? My New Breakfast of Choice



Found these yesterday while in Wal Mart and they are so yummy! I think I will eat these out of the box for snack.

Well I have chicken boiled and ready for mexican chicken tonight, Pizza sauce is made for tomorrow night (I am on a mission to make good homemade pizza, if you have a good dough recipe, please share with me), WW soup on the stove for my lunches, and now I am off to the office to "continue" the tax preparation, ugh!

WW Garden Vegetable Soup


This is too tasty not to share,,,Plus "ZERO" points per serving.

Ingredients:
2/3 cup sliced carrot
1/2 cup diced onion
2 garlic cloves, minced
3 cups fat-free broth (I like vegetable)
1 1/2 cups diced cabbage
1/2 cup green beans
1 T tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini

1. In large saucepan, sprayed with nonstick cooking spray, saute the carrot, onion, and garlic over low heat until softened, about 5 minutes. (I use a bit of EVOO)
2. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer, covered, about 15 minutes or until beans are tender (I use canned, can't wait for fresh)
3. Stir in zucchini and heat 3-4 minutes.

Per serving: 42 yes 42 calories. "0" g total fat, 0 g saturated fat, 0 mg cholesterol, 63 mg sodium, 8 g total carb, 2.4 g dietary fiber, 3 g protein, 41 mg calcium

I love soup and I usually double this recipe because it is so good.

Volume Control


Am I the only one who gets bent out of shape over the volume of commercials? Yesterday I was watching Sweet Home Alabama,one of my favorite movies on USA channel and every commercial got SOOO Loud that I had to hit mute. Do these people really think that Billy Mays yelling at us about Sham Wow, Big City Slider gadget, Wonder Hangers, etc. will make us buy these things? NOT! In fact I don't think mute helps their sales pitch at all. Then I find out for $50.00 I can buy an apparatus that will keep my volume where I set it! Why I ask, should I have to buy something to keep my volume where I set it? Give me a break. Think I'll call John Stossel!

Time to clean out the refrigerator, got that off my chest.

Happy Valentine's Day!



Where has this week gone? Two basketball games and dinner out last night, suddenly it is Saturday. Thought I had my list of "To Do" complete for the weekend and then I opened the closet door in foyer:


Those holes in wall represent where shelf Should Be/ha! Guess this will be number 1 on projects, moving change water in aquarium, mopping floors, laundry, Trixie a bath until later in the day.

It is steak, twice baked potatoes and salad for my valentine. He will stick with his usual Thousand Island dressing but for me it's Martha Stewart Lemon Vinaigrette, check out this video and dressing. If it doesn't make you salad hungry nothing will.

Paula Deen




I love Paula! My daughter and I went to see her in Dallas in 2007. She is not only a good cook but a standup comedian! Don't know if she still tours but if you get a chance to see her, by all means do!
What I am leading up to is her fried chicken recipe. You must try it.

here for Bert's Southern Fried Chicken recipe, you will not be dissapointed! The secret of this recipe is step #1. Liberally sprinkle each piece of chicken with salt and pepper several hours before cooking. (I do this in the morning and cook it that evening for dinner) In another recipe Paula has for chicken, she adds hot sauce to the egg mixture (I add this to this recipe). Cooked fried chicken last weekend for solar and bm,,,,got pretty good reviews/ha.

Very good read! Her life story makes you really appreciate her.

How funny the sixth one is! That is my husband with all of the bags and straps wrapped around his ankles for safe keeping while I run around and make pictures. We were on vacation at Maui in Feb. '07 with our friends and they look so relaxed while I have husband totally tied up/ha. We were on a whale watching cruise as you can see and we had so much fun and I got some good pictures....ha

I Love Lemons!


Yes I do and I always have. I can eat them like an orange. I love a large glass of ice water with, Not a slice of lemon, But half a lemon. Guess you could say I like lemonade without the sugar.
Lemons have so many uses that I know we are all familiar with; just to list a few;

Keep rice from sticking, I love this one,

To keep your rice from sticking together in a gloppy mass, add a spoonful of lemon juice to the boiling water when cooking. When the rice is done, let it cool for a few minutes, then fluff with a fork before serving.

Make soggy lettuce crisp, I didn't know about this one, but will try,

Don't toss that soggy lettuce into the garbage. With the help of a little lemon juice you can toss it in a salad instead. Add the juice of half a lemon to a bowl of cold water. Then put the soggy lettuce in it and refrigerate for 1 hour. Make sure to dry the leaves completely before putting them into salads or sandwiches.
