These are so good and so easy to make! I buy this size jar of jalapenos at Sam's or Wal Mart. After we have eaten enough of the jar that I can transfer jalapenos to smaller jars or containers, I fill the jar with boiled eggs, onion slices, and a few jalapenos. Fill the jar with half vinegar, half jalapeno liquid. (You can adjust the flavor by adding more or less jalapenos) Then comes the hard part....wait ten days or longer to eat. They are so good with sandwiches, etc. How many of you have ever had a pickled egg????

i say gross, but the commander LOVES them! he puts them in big pickle jars from sams after we eat the pickles. i remember having purple ones in our refrigerator growing up!
Aaaaah, Nanny, I do not care for them, BUT my man and Chinese/American children do! It is very traditional to eat pickled eggs or preserved eggs in China. Now, my mother makes them with beets and beet juice so when they are done they are pinkish/red. Never seen then with jalapenos!

I like the ones made with beets too, Jill. My stepmom use to make those, she added sugar and vinegar to the beet juice. These have more of a dill pickle taste.
I'll have to say no but brewmaster LOVES them, as he does most food.
